A hands-on introduction to the process and products of beer brewing

Offered in partnership with UD's College of Agriculture and Natural Resources, this two-day workshop introduces the process and end products of beer brewing. Intended to significantly augment students’ working knowledge of beer’s evolution, its history and the steps involved with making beer, the workshop includes discussion of distinctions between home and commercial brewing. Students will also participate in a tour of Iron Hill Brewery on Newark’s Main Street, a breakout session focused on developing a beer recipe, and a visit to the UD hops garden to learn about the importance of hops and other ingredients in beer making. The UD nanobrewery will be in operation for hands-on demonstrations. Experts from Iron Hill Brewery and Flying Fish Brewing Co. will lead the last day’s beer-tasting session to explain the tastes of different beers, including discussion of desirable flavors and mouthfeels as well as less-desirable “defects.”
Participants in The Art and Science of Beer must be at least 21 years old.

- Historical perspective: From prehistory to present day
- Tour and discussion at Iron Hill Brewery
- Brewing Process Part 1: Know your ingredients and equipment
- Brewing Process Part 2: Mash, Sparge, Fermentation
- Tour and discussion in UD hops garden
Day 2
- Visit UD cheese facility, comparisons of beer-making to cheese-making
- Brewing Process Part 3: Fermentation continued (how it works), Conditioning
- Brewing Process Part 4: Additional considerations - cleaning, pasteurization, bottling
- Visit UD nanobrewery
- Brewing Process Part 5: Yeast starter cultures (genetics and physiology), Craft beer industry
- Tasting with the experts
